jeff, to answer your question is it long-standing or a recent phenomena? i would say both. from what i understand it is a longstanding cuisine in calcutta, to which many hakka chinese emigrated and worked in the tanneries and developed a style of food that had elements of both india and the land which they emigrated from, incorporating more spice and some local ingredients and cooking styles.
while i have a small garden for our two-condo house, i don't have room to compost, so i gave that idea up. and no disposer don't want one, either; more trouble than they are worth, among other things . so i goes into garbage which includes food and wet items and is tightly sealed, esp in summer rather than trash dry items only .
i actually put a trash bin at my job site where they have coffee brewing all day, and designated it for used grounds and filters. so, at the end of the day i take a nice bag home. i'll sometimes throw a couple handfuls out into the garden and dump the rest right into my composter.

i live in an apartment, so i don't have room for a regular compost bin. so, i use a bokashi bin, which makes great compost tea, then i give the compost away when it is through making the tea. i think even if i had a yard, i'd do the bokashi composting first, then throw it in the outdoor bin. you don't have to worry about the ratios, dairy and
